When the weather cooperates, it is as good as it gets at this time of year. The hills are a riot of wild flowers. The cultural calendar is filled with wonderful things to do at the many world-class festivals and special events. And every Friday, June – October, 10:30 am – 4:30 p.m., the blocks just below Telluride’s Elks Park to the Gondola Plaza on Oak Street become a gathering place for the extended Telluride community and guests. Everyone is on a mission to find the perfect tomato, the tastiest meat, mouthwatering cheeses, a lovely bouquet of flowers, just the right piece of jewelry, all available at the Telluride Farmers’ Market.
Daphne Yannakakis and Don Lareau of Zephyros Farm and Garden are among the 40 (give or take) vendors who come from within a 100-mile radius to sell the bounty of their land.
Zephyros is a small diversified family farm on 35 acres located on the Western Slope of Colorado in the North Fork Valley. There they grow certified organic veggies and flowers and are dedicated to promoting biodiversity through seed choices and ever-expanding gardens. Daphne and Don provide a wide selection of vegetable and herb starts.
Daphne and Don are also involved in community outreach. Zephyros is a CSA farm (Community Supported Agriculture). The couple hosts school visits and at one time received grants to do research through the CSU (Colorado State University) specialty crops program.
Here’s a recipe for squash fritters made from Zephyros ingredients:
Mix: 1-1/2 cups boiled, mashed squash (yellow or zucchini) 1 beaten egg 1/2 cup flour 1 teaspoon baking powder Add a chopped sweet onion and whatever seasonings you like. Drop with a soup spoon onto an oiled griddle; cook until well browned, then flip
